Hey guys! How was your weekend?

Mine was especially awesome because my hand model came home after traveling in Germany and Belgium for the past two weeks. I missed him like crazy.

Okay, I guess the first week wasn’t all that bad. I watched too much reality TV, sprawled out like a starfish in the middle of our bed, ate quick and easy salads for dinner + Justin’s dark chocolate peanut butter cups for dessert, and lazily left my dishes in the sink. But then once garbage day rolled around that was it, I was officially ready for him to be home.

Ha! I’m only kidding. I missed him because he’s my best friend and I genuinely love hanging out with him. I even postponed watching the new season of True Detectives until he got back. Now that, my friends, is true love. Speaking of love (are you guys vomiting yet?), look at the sweet gift he brought me!

Tagine

It’s an authentic Moroccan tagine! I’ve wanted one ever since we ate at Le Riad in Aix en Provence so I was over the moon with excitement when I saw it. He found it at a little Moroccan shop in Gent (Belgium), where he was staying.

And of course he also brought back some Belgium chocolate, which I thought was a very close second to the tagine. I had to resist eating the entire box in one sitting.

It’s nice to have him home again, although we didn’t do much on the 4th because I had to work during the day. I’m also still healing from a brutal sunburn so being out in the sun wouldn’t have felt very good for me anyways. I decided to lay out at the pool for about an hour the other day without taking the time to thoroughly apply sunscreen beforehand and now I have patches of sunburn all along the front of my body. I don’t know what I was thinking, I’m usually so good about applying sunscreen. This is the first sunburn I’ve had in over ten years.

Knowing how much damage I did to my skin is killing me but I’m trying my best to stay hydrated and resist the urge to scratch. In attempt to distract my fingers and help heal my skin from the inside out, I made a smoothie that combines some of summer’s best hydrating and refreshing ingredients: cucumber, watermelon, strawberries and fresh mint.

The combination is perfectly sweet without the need for any added sugars. Plus between the mint and the cucumber, you can instantly feel the cooling effect it has on the body. It tastes just as good as it feels to drink.

If you were like me and got a little bit too much sun this weekend then I highly recommend drinking one of these!

Ingredients:

  • 2 cups seedless watermelon, cubed
  • 1 cup peeled and cored cucumber, diced
  • 1 cup frozen strawberries
  • 6 fresh mint leaves
  • 6 ice cubes
  • 1/4 cup water (or coconut water)

Directions:

  1. Place all ingredients in a blender and and blend on high until smooth. Serve immediately and enjoy!
