Chocolate Dipped Peanut Butter Cookies
Thick soft peanut butter cookies that are gluten-free, refined sugar-free, and vegan.

I figured I owed you these for putting up with my endless blabbing about our wedding these past few months. Seriously, you guys have been so supportive and encouraging and I can’t thank you enough for that.
So today I have cookies for all of you!
I guess they’re more for Brandon and I but you get the picture, right? Virtual cookies.
By the way, can you tell I like my cookies thick? If you look in the cookie section of my blog, thick cookies are pretty much all you’ll find. No thin crispies here!

These cookies are based off of my Dark Chocolate Cherry Oatmeal Cookies but this time we’re going with the classic combo of peanut butter and chocolate.
Double yum.
I find cookies are a little more forgiving when you’re trying to create a dessert that’s gluten-free, vegan, and refined sugar-free. I mean, I did use honey to sweeten these but that can be easily substituted with maple syrup. But as far as keeping things healthy, they definitely fit the bill.
Now to be completely honest, I was partial to the dark chocolate cherry cookies {I made them again last night and ate two while typing this post} but Brandon went nuts over these! He’s not a huge peanut butter person either so I don’t know where it came from but I took it as a good sign.
But really, who wouldn’t love a thick peanut butter cookie smothered in chocolate?
It’s basically nature’s cure for any problem you can imagine. That and kale. Cookies and kale. I bet that’s a blog name. Ugh, now I have to go Google it and find out…
Yep! There’s Cookies and Kale and Kale and Cookies. Boy, I feel bad for future food bloggers who are trying to think of a unique name. Impossible, I tell you!

If you’re looking for a healthy gluten-free cookie to satisfy that sweet and salty craving then these are the answer. Enjoy friends!
Ingredients
2 cups oat flour
1 and 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup natural creamy peanut butter
1/4 teaspoon vanilla extract
1/3 cup honey (or 1/2 maple syrup)
1/3 cup unsweetened applesauce
2 tablespoons melted coconut oil (or canola oil)
1/2 cup chocolate chips + 1 tablespoon coconut oil, melted
Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- Sift dry ingredients (oat flour to salt) together in a medium size bowl, then add wet ingredients (peanut butter to coconut oil) in a separate large bowl. Mix the wet ingredients together until smooth. If peanut butter isn’t runny enough, place in microwave for 10-15 seconds to soften.
- Add the dry ingredients to the wet and mix together until a uniform dough has formed. Roll dough into large tablespoon sized balls and place onto the lined cookie sheet.
- Using a flat surface or your hand, press cookies down gently until flattened. Bake in the oven for 10 minutes, until bottoms are light brown. Allow to cool before serving.
- While cookies are cooling, melt the chocolate and coconut oil in a microwave safe bowl by heating for 15-20 seconds at a time. Stir between each heating and repeat until it is smooth and melted.
- Dip the cookies in the chocolate and place back on the cookie sheet or on a plate then refrigerate for 30 minutes so that chocolate hardens.
These are right up my alley. Chocolate + Peanut Butter? I’m in. Totally baking cookies this weekend!
I’ve only read 3 blogs so far this morning and 2 of them have involved peanut butter and chocolate….I think the universe is telling me something :-p You seriously just can’t go wrong with the combo!
Chocolate and PB = best combination ever. Maybe I’ll get an itch to bake this weekend. I ate an entire box of Girl Scout cookies this week, so I’m trying them everywhere I go too!
I agree with you, thick cookies are the best cookies! I would love a thick peanut butter cookie smothered in chocolate right about now….virtual cookies is all I get for now though..:(
Ummm…love these! Chocolate and PB is by far the best combo ever. These cookies would not last very long in our house at all. They look amazing and I love the simple ingredients.
haha I loved this post. And I definitely agree – thick cookies are the only way to go! Peanut butter and chocolate is a really hard combo for me to turn down – and I love that these are better for you. I’ve reallyyyy been trying to only use natural sweeteners lately!

Eric and I went through 5 boxes of Girl Scout cookies. Not once did I look at the ingredient list. Whoops. Next time I will. But damn they were good. After finishing the last box last night, I said no more cookies! but now looking at yours, I maye have to bake some. Maybe make a healthy recipe for a Samoa??
I think I would be in Brandon’s camp! I am a sucker for anything with peanut butter and chocolate, and Peanut Butter Patties were totally my favorite growing up. Except they’re called Tagalongs here in Utah, which always confuses me. Anyway, I love your healthy version! I bet you could convert even those Girl Scouts to the oat flour way of life :)
