Lemon Ginger Spritzers with Fresh Mint- made with ginger simple syrup and fresh lemon juice, these sparkling drinks are super refreshing and healthy too!
I have a bit of an obsession with fizzy drinks. Kombucha, shrubs, Aperol Spritz…I love them all, especially when it’s hot outside. There’s something about the effervescence that I find so refreshing.
If you’ve been following me for a while then you know that I also love a good homemade spritzer. Some favorites of mine include Pineapple Cucumber and Pomegranate, but I had some of leftover ginger syrup from these Blueberry Ginger Margaritas and wanted to try something new with a lemon ginger and mint combination. Turns out it was definitely a good idea.
To make the ginger syrup, all you need is fresh minced ginger and a little bit of honey or agave nectar. Then you place it in a saucepan, bring it to a simmer and cook for about 30 minutes until it thickens.
Once you’ve got the syrup made, it’s as simple as combining it with lemon juice, fresh mint and your favorite sparkling water.
It’s so basic I feel silly calling it a recipe but it really is the perfect way to cool off on a warm day. I’m especially looking forward to making them for us to enjoy on our new patio once we move in.
I gotta tell ya, maintaining a calm and patient mindset during a renovation is so much harder than it seems. We’ve had a few hiccups thanks to some communication issues and I had my first official breakdown on Saturday. The stress of it all has been so overwhelming and I was overdue for a good cry.

Cook Time: 35 minutes
Total Time: 40 minutes
Make the ginger syrup: In a small saucepan, combine the fresh ginger, agave, and water. Bring to a boil then reduce to a simmer and cook for 35 minutes. Careful not to cook at too high of a temperature or the ginger will burn. Set aside to cool.
Make the spritzers: Fill two 16-ounce glasses with ice. Add 2 tablespoons of ginger syrup in each and juice of 1/2 lemon in each. Distribute fresh mint evenly and fill each glass with sparkling water. Serve immediately and enjoy!
