Because who wants to spend all day in their kitchen? Or better yet, who wants to turn on their oven?

Anyways, now that we’re all feeling intellectually stimulated by my sophisticated writing, let’s move on to cheese.
What do you guys know about halloumi?
The first time I tried it was three or four years ago back in College Station. We were out to eat at one of our favorite restaurants (Café Eccel which is now closed…boo!) and they brought it out flaming on a cast iron skillet. I had no clue what it was or how to pronounce it but I can tell you one thing, if you bring me flaming cheese, Ima eat it.
Come to find out, it’s actually made from sheep’s milk from the Greek island of Cyprus. And it’s particularly known for how well it holds up on the grill which is why it’s called “the grilling cheese of Cyprus”.
It’s also typically made without animal rennet, making it suitable for vegetarians. Woo hoo!
That settles it. I’m moving to Greece!
I’m kidding, obviously. But if I can’t go to Greece, I bring Greece to me.
Where were we? Oh right, halloumi.
What inspired to me make these kebabs was actually a veggie burger recipe from Green Kitchen Travels. Rather than grill it, they chose to shred the cheese along with zucchini, carrot, and fresh mint, then press it all into a patty and pan fry it.
Well, let me just tell you, the flavor of fresh mint with halloumi is to-die-for! It’s refreshing, yet savory so you feel satisfied but not weighed down.
The only problem was that I couldn’t get the burgers to hold together very well. I think using a few paper towels to absorb the liquid from the zucchini might have helped but for the sake of patience, I decided to recreate a kebab version and serve it with a mint yogurt sauce.
The whole thing comes together really fast and the grilled veggies and cheese taste great rolled up in a big leaf of romaine with the yogurt sauce on top. They really are the perfect summer meal!
