Hey guys! How was your weekend?

Mine was good. It started out productive and ended lazy. Just the way I like it. :)

On Saturday we went to see American Sniper and man, was it INTENSE. My heart was racing the entire time, tears were flowing, and emotions were running wild. It was difficult to watch at times but overall I thought it was a fantastic movie. And I still can’t believe how buff Bradley Cooper got for his role. Woo doggay!

In other news, I completely forgot that the Superbowl is next week and failed to put together any festive football-themed recipes for you.  Whoopsies.

I’m trying my best to make it up to you by showing you quesadillas that, technically, could be considered football food. Or, at best, just an easy idea for a lazy lunch or weeknight dinner.

Actually, you’re probably going to laugh at me for even posting this as a recipe but I kind of love them so that means I have to show you, k?

Refried Pinto Bean Quesadillas

Okay, so these refried beans are the key player in this quesadilla game because they already have lots of flavah cooked right in. And everything in the ingredient list is recognizable which is always a good thing.

Now this is not necessarily something I would eat every day but it’s nice for when you’re tired and you want something easy. Plus they go really well with cold beer so they’re perfect for football season.

Alright so let’s take a look at how silly easy these are. We start by slapping some of them tasty beans on a whole grain tortilla, sprinkle it with a little bit of cheese, slap another tortilla on top and then heat it in a skillet on each side until it’s light brown and slightly crispy.

After that, top it with your favorite salsa and some avocado slices (because they make everything better, obviously) and voila!

Quesadilla is ready to be inserted into face.

Whether you need a last minute appetizer/snack idea for a football party or just want an easy meal during the week, these are likely to fit the bill. All you need is an ice cold beer and you’re good to go. Or whatever your adult beverage of choice may be. Or non-adult choice. You get the point.

The Easiest Four Ingredient Quesadillas

Ingredients:

  • 1 package refried pinto beans (Pacific Foods is 13.6 ounces)
  • 1 cup salsa
  • 1/2 cup shredded Mexican cheese
  • 4 whole grain tortillas
  • 1 avocado, sliced (optional)

 

Directions:

Warm a skillet over medium heat and then place one of the tortillas on a plate. Spread 1/2 cup refried beans on top and then sprinkle with 1/4 cup shredded cheese. Top with another tortilla then heat in the skillet on each side for 3-4 minutes, until light golden brown.

Top with 1/2 cup salsa, avocado slices, and cilantro for garnish (optional). Serve warm and enjoy!
