I realize the whole “lavender-infused” part of this recipe sounds fancy but I promise it’s not. You guys know me. I’m so not fancy.

I mean, it might seem like I am to someone who eats a Standard American Diet but I’m actually not. It’s just using a few different ingredients than what most people are used to. But they’re cheaper and easier to work with.

Okay so the lavender part isn’t exactly what I’m referring to when I say that. Dried lavender isn’t something I usually cook with but I had some on hand and thought, Ima throw this in my syrup. Very good decision. What I am talking about is the vegan part of this French Toast. Instead of eggs we’re using chickpea flour! It’s less than $2 a bag and it’s high in fiber and protein without any cholesterol or saturated fat. Plus you don’t have to hassle with egg shells or salmonella. Need I say more?

The first time I tried to make vegan French toast was with ground chia seed. Maybe it’s just me but it stuck to my pan like glue. I was so disappointed…and hungry.

This time around worked so much better. All you have to do is whisk a few tablespoons of chickpea flour in with some plant-based milk, vanilla extract and cinnamon, and you have a perfectly good batter to coat your favorite bread with. For me that means a nice loaf of local and organic whole grain sourdough. Can you believe just 2 ingredients (flour and water) can make up something so dang beautiful? It’s all very romantic. Watch Cooked on Netflix. You’ll see what I mean.

The chickpea flour works wonders to form a nice golden crust on your bread that tastes exactly like good ol’ French Toast. You can skip the fancy factor and just serve it with regular *pure* maple syrup. But if you happen to have dried culinary lavender on hand then you MUST try infusing your syrup with it!

All you have to do is cook them together for a few minutes in a small sauce pan then use a fine mesh strainer to remove the lavender bits. BOOM.

It’s seriously amazing served with fresh strawberries and coconut whipped cream. And if you happen to have some leftover, it makes a fantastic natural sweetener for your iced tea. Just sayin’.

Vegan French Toast with Lavender-Infused Syrup

Ingredients:

  • 1 day old loaf artisan bread, cut into 1 and 1/2-inch slices
  • 1 cup non-dairy milk
  • 4 tablespoon chickpea flour
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • coconut whipped cream and sliced strawberries for serving

Lavender-Infused Syrup

  • 1 cup pure maple syrup
  • 1/2-1 tablespoon dried culinary lavender

Directions:

Warm a large skillet over medium heat and lightly grease as needed.

In a saucepan over medium heat, combine the pure maple syrup and culinary lavender. Bring to a low boil then turn heat to low and simmer for 5 minutes. Remove from heat and set aside.

In a medium bowl, whisk together 1 cup non-dairy milk with 4 tablespoons chickpea flour, 2 teaspoons vanilla extract and 1/2 teaspoon cinnamon until smooth. Dip each side of the bread into the batter then cook in the skillet on each side for 2-3 minutes, or until light golden brown.

Serve French toast warm with whipped cream, strawberries and lavender-infused syrup.
