With Thanksgiving right around the corner, my mind is already dreaming of all the scrumptious side item possibilities. Don’t get me wrong, I love a good lentil loaf but the sides are where it’s at. Am I right or am I right?

One side item that I find often gets over looked is delicata squash. It’s one of the only squash varieties with skin that’s delicate enough to eat (hence the name delicata) which might sound kind of strange but I promise it’s delicious. Paired with a maple dijon dressing, it’s incredibly simple to make and bursting with flavor.

To roast the squash I used De’Longhi’s new Livenza Compact Convection Oven and it worked like a dream. It preheats so much faster than my standard oven and I was amazed at how perfect the delicata squash came out. I also found it to be great for reheating things like pizza, sandwiches, or basically anything that you wouldn’t want to get soggy in the microwave.

To prepare the recipe all that’s required is cleaning out the seeds of the squash then roasting it while you prepare the dressing. Once it’s golden brown, you toss with the dressing and serve. Like I said, super simple!

And if you want to make it for the holidays you can jazz things up by serving it over a bed of massaged kale with a sprinkle of pomegranate seeds.

Roasted Maple Dijon Delicata Squash

Yield: 4 servings

Prep Time: 5 minutes

Cook Time: 35 minutes

Total Time: 40 minutes

Ingredients:

  • 2 medium size delicata squash
  • high heat oil for roasting
  • 2 tablespoons extra virgin olive oil
  • juice of 1 lemon
  • 1 tablespoon dijon mustard
  • 1 teaspoon pure maple syrup
  • salt & pepper to taste

Directions:

Preheat the oven to 400°F then line a baking sheet with parchment paper. Chop off the stem of the squash, slice in half then use a spoon to scoop out the seeds and flesh. Cut each side into 1/2-inch pieces then arrange on the baking sheet. Lightly spray or coat each piece with high heat oil and sprinkle with salt & pepper. Bake for 12 minutes on each side, until tender and light golden brown.

Meanwhile, prepare the dressing by combining all of the ingredients into a measuring cup. Whisk together until smooth.

Once the squash is done roasting, place it in a bowl and top with dressing. Toss to combine. Serve warm and enjoy!
