Roasted Broccoli & Corn Quinoa Frittata
You guys, it’s official. Brandon and I have become the couple that sleeps in separate rooms.
I know…it’s only been eight years, not fifty, but after so many nights sleeping alone while he was up all night working on his dissertation or away traveling, I’m at a point now where I actually prefer to have the bed to myself.
Don’t get me wrong, I love seeing his handsome face first thing in the morning but not having to feel constant heat radiating from his body and avoiding a 3am wake-up call from his motorboat snoring nose right next to my ear is actually kind of peaceful.
Not to mention the fact that I get to sprawl out in the middle of the bed like a princess with pillows on every side of me. Oh, and that I can make the bed in three seconds flat as opposed to waiting thirty minutes for him to finally get up and it taking over five minutes for me to try and reorganize the fury that he’s unleashed on our sheets with his legs.
Oh no, this is beginning to sound bad isn’t it?
Well, it’s kind of true. Except that we don’t really sleep in separate rooms. We’re just doing it right now because he’s sick as a dog and doesn’t want me to catch what he has. Always a gentlemen. Although, after he reads what I wrote, he may not want to come back once he’s feeling better.
Looking back, I wish I would have whipped up a big pot of vegetable soup for him over the weekend but I honestly thought he was faking it to get out of training for our 5k.
Turns out I was wrong, he’s definitely not faking it but hopefully a tasty, protein-packed frittata will do the trick.
Roasted Broccoli & Corn Quinoa Frittata
Ingredients
- 1/2 cup quinoa, soaked overnight and rinsed (soaking is optional)
- 3 whole eggs, beaten
- 5 egg whites (about 1 cup)
- 1/2 cup reduced-fat or non-fat milk (can also use unsweetened non-dairy milk)
- 3/4 cup shredded cheddar cheese
- 6 green onions, diced
- 2 garlic cloves, minced
- 3 tablespoons olive oil
- 2 cups broccoli, chopped into small pieces
- 1 cup corn kernels, fresh or frozen
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon fresh herbs or 1 teaspoon dried herbs (I used fresh oregano)
Makes 8 servings
Directions
Preheat oven to 400°F then cook quinoa in medium size saucepan by boiling 1 cup water then adding quinoa and reducing heat to low. Cover with a lid and cook for 15 minutes. Fluff with a fork and set aside.
Place broccoli and corn in a large baking dish and toss with 2 tablespoons olive oil until well coated then bake in the oven for ten minutes.
While veggies are roasting, combine eggs, egg whites, milk, cheese, seasonings, and herbs then whisk until slightly frothy.
Warm a large skillet (ideally one without a plastic handle) over medium heat with remaining tablespoon of olive oil then add minced garlic and diced green onion. Sauté the onion and garlic for a few minutes then add the roasted broccoli, corn and quinoa and mix together. Pour the egg mixture on top of veggies in the skillet and cook until sides are firm and light brown.
Turn the oven setting to broil then place the skillet on the top rack to cook for about ten minutes, until top is puffy and golden brown. Allow to cool in skillet for a few minutes before serving.
I’m aware that this meal might not have any of you cooing in awe or drooling on your keyboards but it’s actually a really satisfying dish.
The corn offers a nice sweet crunch and of course, broccoli is always good with cheddar cheese.
Plus, it’s easy to make and yields eight servings so we had it for dinner one night paired with a salad and then for lunch two days after.
Easy, healthy and tasty…doesn’t get better than that!

Confession: I’m not the biggest fan of sharing the bed with anyone either. I wouldn’t say that I’m a light sleeper, or that I even need a lot of room, but not having to worry about anyone else being around definitely makes me sleep just a tad bit better. That being said, it’s nice to have someone around in the winter… it gets cold up here!
I know, my feelings change in the winter. I love tucking my toes behind the crevice of his knees for warmth!

I cannot count how many frittata recipe I saw around the blog sphere just in the last week. Your pictures are amazingly beautiful though and I love the interesting combination of corn and broccoli. Guess I just have to maka a frittata every week until the end of summer.

Considering that I currently share the bed with a guy who likes to squish himself onto my side of the bed in his sleep (literally forcing me to the edge until I push him back) and a dog that will still try to squeeze in in between us, I think it’s safe to say that I would appreciate a night or two of getting the bed to myself ;-)

Does Coco sleep with you guys too? Our biggest issue is Cooper taking up the whole bed and the two of us are on the edge all night. He likes to lay sprawled on his back.. but he’s so darn cute I can’t bring myself to move him!
No way, Coco does not sleep with us. She takes up even more room than him and farts constantly (I’m not kidding). I try to let her sleep with me when he travels but she jumps down to sleep in her own bed after a few hours.
If you get them a cozy bed of their own, they get used to it and prefer to sleep there! Or you could get a California King to solve the problem?
Sharing the bed is definitely a difficult thing to do. Snoring is definitely an issue for me…just last night I to tell my husband to turn over because of snoring. Ugh!

Whenever Jake and I go on vacation, if the hotel has two beds, we sleep in separate ones. It’s such a nice break from snuggling up into a hot little bed together. I’m already planning our California King bed purchase. I think that’ll be the secret to our happy life together :).

Your story about sleeping in separate beds is really funny! I’m not sure if that will happen to us or not. My hubs has been away on business most of this year so I am really getting used to having the bed to myself. We will see! :)
As long as you don’t leave your skillet in there too long, it should be fine. The one I used has a plastic handle and it bubbled a little but didn’t do any damage. A metal handle or cast iron skillet would be best though!

Don’t feel bad! I have been married for 11 years and I think my husband and I have slept away from each other more than we have slept in the same bed! We either had opposite work schedules, worked in different states (yep, you read that right), or I had a baby in bed with me so he took the couch!
Since my husband has been back on days, we have learned to sleep together again. One of us has to be asleep before the other one comes to bed and I must sleep with earplugs in! LOL

Separate beds for the win! We have never lived in a place that has had room for separate beds but – similar to you – Kyle travels so frequently that I always either sleep in the middle or diagonally across the bed. He doesn’t really like that when he is actually home ;)

Yesss…. the snoring, the crazy blanket massacre, the hot body sweating on the sheets and me. Ugh. sometimes I just want to push Eric straight off the bed. As much as I miss him when he goes on business trips, I completely love having the bed to myself. Well as much to myself as the cats allow ;) Complete starfish in the bed is my idea of bliss. And a king bed is what I truly want for our bedroom furniture. looooooove big beds.

Okay I’m so glad that my husband is not the only man who turns a bed into a tornado zone every. single. night! Whenever he’s out of town and I have the bed to myself, I can wake up with the bed practically still made. But when he’s home I wake up to one corner of the sheet and the rest are wrapped around his body and/or spilled out all over the floor. Anyway- I love the ingredients in this frittata! :)

I kiiinda sorta feel the same way when my husband gets done with a string of overnight shifts…I like having the bed to myself sometimes! And I TOTALLY get the whole body heat thing….it’s like sleeping next to a radiator! GAH! Anyways, your frittata looks amazing – healthy and delicious!!
I know EXACTLY what you are talking about with the bed sheets. I stopped using our flat sheet because it would end up on the floor every morning and I was sick of putting it back on the bed. This is hilarious – glad we can commiserate about it together!
I might be the only fitness blogger to say this, but I don’t really love quinoa. Something about the texture, but I really wish I did. Maybe I’ll try again with this recipe!
I should follow your lead and stop using the flat sheet too! It would definitely save a lot of time.
I can see how the texture of quinoa might be a little funny to some. I like it so much because it’s high in protein which is good for my vegetarian diet.
I would maybe use only 1/2 cup instead of a whole cup that way there isn’t quite so much of it!
That looks delicious, shame I can’t eat Quinoa but I could sub in brown rice or maybe even barley and it would still work I think.
