Radiance Boosting Coconut Kale Smoothie
I’m sure most of you have probably heard of using coconut oil as a moisturizing treatment for your hair and skin (if you haven’t, you should try it!) and as it turns out, eating coconut can also offer health benefits that are great for achieving radiant skin.
With that in mind, I made this smoothie with real coconut flesh, super hydrating coconut water, and antioxidant-packed kale to help me get that perfect summer glow.
Radiance Boosting Coconut Kale Smoothie
Ingredients
- 3/4 cup (6 ounces) coconut flavored yogurt (substitute non-dairy yogurt for vegan version)
- 2 medium size bananas, peeled, sliced and frozen (about 1 and 1/2 cups)
- 1 cup kale, removed from stem and chopped
- 1/2 cup coconut water (I used pineapple flavored coconut water)
- 1 tablespoon coconut meat
- 1/2 tablespoon creamy almond butter
Directions
- Layer coconut yogurt, frozen sliced bananas, chopped kale, coconut meat and almond butter in a blender then pour in coconut water.
- Blend on high for several minutes until a smooth creamy texture is achieved.
- Serve cold with a straw!
Makes 2 (8 ounce) smoothies
I’m sure this smoothie would be fantastic with fresh coconut meat but…ain’t nobody got time for that!
I found a jar of Coconut Manna from Nutiva which is basically pure, dried coconut flesh and I thought it worked great in this smoothie.
To achieve a thick and creamy texture, I also recommend using Icelandic or Greek style yogurt. I know Chobani just released a coconut flavor but I couldn’t find it anywhere so I used Siggi’s instead.
It turned out perfectly creamy and was full of tropical coconut flavor. I had to pinch myself to remind me I wasn’t on a beach in Bora Bora. It was painful.

oh i love skyr! (weird, i know, since i dont like greek yogurt, but skyr is yummy!) this sounds so good. ive always liked coconut but lately ive been craving it- this smoothie looks amazing. amazingly i have still never tried using coconut oil on skin/hair- i need to get on that!
Yes, you should get on it! It smells so good and makes your hair super soft!
I’ve never gotten coconut oil, but this just reminds me of Aussie (coconut conditioner). It smells ridiculously amazing and can really make your hair feel really smooth with just one application. <3

I’m not a kale fan, but maybe I could handle it in a smoothie ;-) You have me craving something coconut-y now! I suppose if I have to get through this massive heat wave we have right now, something tropical seems appropriate.
I think that kale doesn’t “blend” as well in smoothies as spinach but I like to mix it up for the health benefits. But I think spinach would be a great alternative!
I loooove coconut! I am seriously addicted to the stuff. Your smoothie recipe looks so delicious! I have a giant bag of kale in my freezer right now that I have been using on the daily. It is so easy to grab a handful and throw it into meals.

I actually got the idea from a smoothie Tina posted on Instagram from FitBLoggin. I haven’t read her blog in a while so I’m not sure if she made it herself but I loved the way it sounded so I had to recreate one!

I absolutely love coconut. I love to eat it, drink it, use it in my health routine. You name it. The flavors in this smoothie seem perfect. Going to try making it.

I’ve heard that coconut oil does some fantastic things for your hair and your skin, but I’ve never had the guts to try it yet! One of these days…maybe. :P I’m also so jealous that you were able to find coconut meat…I’ve never had an actual coconut but I love coconut so that has to happen at some point!
Yes, you have to try a deep conditioning treatment with it in your hair. It’s a nice treat! I found the coconut flesh at Whole Foods but you can also buy it online!
I used to add kale to my smoothies all the time! I love how there are three sources of coconut too – triple coconut awesomeness! :P
I love massaging coconut oil into my hair about 30 minutes before I wash it. It makes it so soft and keeps in from getting tangled!

I LOVE love love coconut. I stuffed my face with coconut chips after my massage yesterday. The evidence is still in my car. The smoothie does sound awsomely refreshing. I’ve got fresh kale in the garden to use too :) I just need to get that coconut meat. Did you get it online or at a store?

I bought the coconut meat at Whole Foods.
And I usually put the coconut oil in my hair (like 3-4 tablespoon for longer hair) for 30 minutes to an hour before my shower. I’ve even left it in while working out! However, that may not be good if you’re prone to acne.
Yum, that looks amazing! I tried coconut oil in my hair once and couldn’t really tell a difference. I’m guessing I didn’t leave it in long enough. I should probably try it again. :)
I’m a big coconut oil lover! I’ve used it on my body before, but I mostly use it for cooking. It’s my go-to oil for roasting at high temperatures. I should try it in a smoothie sometime!

Great giveaway!! I have used coconut oil for things besides cooking…I’ve put it on my face as a moisterizer and even used it in my air once! The trick to that is only using a very TINY amount so your hair doesn’t look all oily :) Learned that one the hard way…

I hate eating coconut but love using it for my hair
I’m not a juicer…yet! In the meantime, I drink a ton of water infused with fruit or veggies. I’ve just started experimenting with smoothies and am enjoying those a lot! Defiantly going to try this coconut version.. ;)
