Orange Coconut Quinoa Waffles

My first choice for breakfast on a relaxing weekend morning is fresh, homemade waffles.

I love how the smell wafts throughout your house, making you so excited for the moment you get to savor the first bite.

Soft, whole grain quinoa waffles flavored with tangy orange and sweet coconut…these are truly the perfect way to awaken your taste buds in the morning.

Although the idea for this recipe had been on my mind for a few months, I didn’t have a waffle maker! I mean I used to but it had seen it’s day and I was determined to replace it with one that wasn’t made with typical non-stick chemicals such as PFOA and PTFE. Cast iron seemed to be the best alternative but most of the electrical ones were outrageously expensive so I was left with a few old school options to choose from and ended-up getting Rome’s #1100 Old Fashioned Waffle Iron for $20.

The downside is that you have to season it yourself and operating it does require a little practice.

To start with, you have to burn off the paraffin wax coating which is ideal to do on an outdoor grill if you have it. I put mine in my fireplace for about an hour and then scrubbed it thoroughly with soap and water afterwards. Then to season it, I coated the entire thing with refined Sunflower oil (made for high heat) and put in the preheated oven at 350°F for an hour.

I then let it cool and repeated the process one more time. If I had an outdoor grill, I would have definitely used that to season it because it does smoke a little while it is in the oven and I had to open my windows and turn the exhaust fan on high during the process.

The morning I used it, I brushed the inner parts with oil and placed each side on a burner on the stove and allowed it to sit over medium heat for about 20 minutes. Again, I made sure to keep my exhaust fan on high while I did this.

After that, it was ready to go! I did have to throw a few waffles out before I found a method that worked for me but after that, it worked great!

Orange Coconut Quinoa Waffles

  • 1/2 cup Buckwheat flour
  • 1/2 cup Quinoa flour
  • 3/4 cup Coconut flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1 cup Earth Balance, melted
  • 3 eggs
  • 1 tablespoon ground flax seed
  • 1 and 3/4 cup (14 ounces) unsweetened vanilla almond milk
  • 1 cup (8 ounces) orange juice
  • 2 tablespoons brown sugar
  • 1 tablespoon vanilla extract
  • 1 and 1/2 tablespoon orange zest (I used one medium size navel orange)
  • 1/2 cup sweetened shredded coconut

Start by combining all of the dry ingredients in a large bowl and then sift together.

In a separate bowl, combine the brown sugar, ground flax, coconut and orange zest with all of the wet ingredients and mix well.

Continue to add the dry ingredients to the wet until a batter has formed and it is well combined.

I used between 1/3 and 1/2 cup batter for each waffle and ended up with about 9 waffles total. To cook them, I heated both sides of the waffle maker over medium heat on separate burners then poured the batter into the bottom side, attached the top and allowed to cook for one minute on the bottom. I then flipped it over and cooked on the top side for 3 and 1/2 minutes, carefully lifting the opposite side to see if it appeared to be cooked through. Then I opened it up and dumped it out on a plate straight from the waffle maker to serve.

Because this waffle mix is gluten free, the texture is more tender than most waffles but they are soft and fluffy with a perfect balance of flavor that will keep you coming back for more!
