October Favorites | Making Thyme for Health

Summer has always been my favorite time of year but now that we live in Georgia I’m feeling like fall is winning for first place. The air feels fresh and crisp, and the leaves are actually changing colors. We spent last weekend in Asheville and autumn is really showing off up in the mountains. Makes me wish the trees would stay this way all year long. They’re so beautiful!

Needless to say, my favorites this month include lots of fall-inspired goodies like cozy sweaters and pumpkin cookies. I know, I’m so cliche. Regardless, I hope you enjoy it and cheers to a happy November!

Favorite Instagram: Huck. If you’re not in the fall mood yet then I can guarantee you will be after perusing this guy’s feed. I don’t even know how it’s real.

 

Favorite Breakfast: Nutella Smothered Sourdough Waffles. I’m a sucker for a good waffle and as soon as I saw Jessie share these on Instagram, I about lost my mind. I need to get a sourdough starter ASAP.

 

Favorite TJ’s Find: Red Lentil Pasta. I know I’m a million years late to the TJ party but I recently picked up some of this pasta and it’s a total game changer. You would never guess that the only ingredient is red lentils. Mind = blown.

 

Favorite Holiday Inspired Meal: Vegan Meatballs with Miso Mushroom Gravy. This is my idea of a perfect holiday meal. I want to dive face first into that plate!

 

Favorite Appetizer: Kimchi Brussels. When we were in Asheville last weekend we went back to Plant (because they have the most incredible food ever) and one of the new items on the menu were these kimchi brussels sprouts. Holy ridiculously delicious. It was almost like they had a cheesy flavor to them, UGH. I need to figure out how to recreate them for you guys because they’re other worldly.

 

Favorite Pumpkin Treat: Pumpkin Oatmeal Chocolate Chip Cookies. Just look at that thick, chewy center. Killing me.

 

Favorite Series: Self-Care Interviews. I just discovered this blog a few months ago and I’m obsessed with this series. Some of my favorite bloggers have been interviewed and I love the personal questions she asks them. It’s fun getting a peak into their different routines!

 

Favorite Soup: Leek, Fennel, Apple & Walnut Soup with Turmeric. My craving for fresh fennel goes into overdrive in the winter. I usually eat it in salads but I’m thinking I need to try it cooked in this soup because it sounds like an amazing combo.

 

Favorite Sweater: Airspun Cable Knit Sweater. Hi, I’m 33 and still shop at Abercrombie and Fitch. Can we still be friends? But seriously, this cardigan is super soft and cozy + it’s made without wool so it’s vegan-friendly too. YUUHHSSS.

 

Favorite Dessert: Pecan Pie Bars. Pecan pie is one of my favorite desserts but I rarely eat it since it’s hard to find one that’s not loaded with butter, eggs, and sugar. I love that these bars are made with healthier ingredients. This means we can eat pecan pie every day, right?
