Hello there! How was your weekend?
I spent mine doing something I haven’t done in years…laying on the couch watching TV.
Unfortunately I couldn’t muster up the energy to do much of anything else thanks to a wicked sinus infection that started plaguing me in Thailand. I tried my best to fight it while we were there but after 3 separate flights and over 30 hours of travel to get home, my body finally gave in.
My tastebuds are basically non-existent right now so it’s pointless for me to even try to accomplish anything in the kitchen. Thankfully I had a few recipes on the back burner waiting for me to share when I got home, including this scrumptious Kale Pesto Pasta.
Have you ever tried kale pesto?
I’ve been hooked on it ever since the first time I made Kate’s addicting Kale Pesto Pizza. Using pecans gives it a delicious twist that I personally love but you can easily substitute your favorite nut or seed if you’re not a fan of pecans.
The beauty of this meal is that the whole thing is made on the stovetop and it takes less than 30 minutes to whip up. It’s the perfect quick and easy summer dinner.
I have plans to make another pot as soon as my taste buds return! :)

Sarah – poor you! I hope you are not feeling guilty whatsoever for doing nothing and just lying on a sofa – your body obviously told you “enough is enough”. I was only in Thailand for 5 days. I loved it and wish we could have stayed longer. We left the same day they were attacked by several bombings. It breaks my heart that I have to keep hearing about these horrible events around the world. :(

And we are pesto-tomato twins today aren’t we? I love this beautiful dish with those colorful tomatoes and that pesto sounds delicious with the pecans! Going to get that recipe right now!

Ahh I hope that you feel better soon. When I travel, it’s the only time that I ever get sick. All of those germs, time changes, and hotels do me in if I’m not at the top of my game!
Such a bummer you got sick! Guess it’s good it didn’t really kick in until the end, though. I think a weekend on the couch was well deserved after all that travelling!
ooo that pesto looks so delicious! what a great idea using kale and pecans. hope you feel better soon – seriously, cross world flights are 100% of the time going to get you sick. it’s the one downside of travelling to such beautiful places!
Yes, unfortunately traveling that far comes at a cost. But it’s totally worth it! :)
This might be the quickest turnaround ever for a blog recipe – I read this yesterday and made it last night! I had kale and tomatoes that needed to be used, and I’m not always in the mood for salads, so this was perfect!

What a bummer, coming home from an awesome trip, sick, is no bueno. However, your trip looked AMAZING, I was loving all the Insta Stories. It looked SO beautiful! Duuuuuude, I have a sinus infection too! I had a little cold creep up on me the second day of my trip in Iceland, and it was no biggy until I flew home yesterday. I hope you’re feeling better now, and I can’t wait to see your recap of Thailand! It’s been so fun following all your snaps, so I’m psyched to get more deets on all the places you went! Hope you’re feeling better now Sarah! Not being able to enjoy food is the worst when you’re sick (and of course the fatigue, congestion, etc suck too – but really, I hate it when food loses its enjoyment factor haha).
