Healthy Vegetarian Meal Plans: Week Twenty Five
Happy New Years Eve! I’m popping in with the first healthy meal plan for 2017, just in case you need a little inspiration. All of the options this week are entirely plant-based and utterly delicious. I hope you find something you like and that you have a wonderful new year!!
Sunday
Vegetarian Chili from Hummusapien
Prep Ahead Tip: The vegetables can be chopped in advance and stored in an airtight container for up to 2 days.
Vegan/Gluten-free Substitutions: Recipe is vegan and gluten-free.
Monday
Swiss Chard Mushroom Enchiladas from Making Thyme for Health
Prep Ahead Tip: You can prep the enchiladas on Sunday then add the sauce and bake. Or you can chop the vegetables up to 2 days in advance.
Vegan/Gluten-free Substitutions: Recipe is already vegan. Use gluten-free/corn tortillas to make them gluten-free.
Tuesday
Quick and Easy Chana Saag from The Roasted Root
Prep Ahead Tip: The recipe only requires about 40 minutes to make, so not much prep ahead of time is necessary. Rice can be cooked up to 3 days in advance.
Vegan/Gluten-free Substitutions: Recipe is already vegan and gluten-free.
Wednesday
Warm Farro Bowl with Roasted Vegetables and Kale Pesto from Eats Well With Others
Prep Ahead Tip: Roast the vegetables and make the pesto ahead of time if you’re pressed for time on a weeknight!
Vegan/Gluten-free Substitutions: This recipe is already vegan! To make it gluten free, substitute the farro with quinoa.
Thursday
The Ultimate Veggie Sandwich from She Likes Food
Prep Ahead Tip: Tofu can be cooked ahead of time.
Vegan/Gluten-free Substitutions: Use gluten-free bread and vegan mayo to make vegan/GF.

I love these and the prep tips are great but honestly all those groceries for one week is quite expensive :( Would love if you could do one for people on a budget sometime!
I really appreciate the feedback, Sarah! It’s tricky to calculate and plan for cost when I am collaborating with 4 other bloggers but I will definitely take that into account and try to come up with a solution on my own.
Until then you might try replacing a few recipes per week with cheaper options that you enjoy. For us that means salad and frozen pizza or some kind of meatless protein (I like using Quorn cutlets) with a side of roasted broccoli and potatoes. I’ll do my best to brainstorm budget friendly recipes in the meantime! :)
