I clearly have a problem.

Warm sweet corn paired with fresh, juicy tomatoes…they’re just so darn good together! I can’t help myself.

I’ve actually made corn and tomatoes in a white wine sauce as a side item multiple times over the last several years and I just love the way the flavors blend together.

After enjoying an orzo salad during our picnic in Napa and leaving with about half a bottle of crisp sauvignon blanc, I knew exactly what I wanted to make over the weekend.

By the way, if you’re thinking to yourself that you can’t make this because you don’t have a grill, you’re wrong.

You can:

a. do what I did and buy frozen grilled corn (I know…I’m such a fraud), or

b. use fresh or frozen corn and toast in the skillet with one tablespoon of butter over medium-high heat for a few minutes until golden brown.

See? Problem solved.

 

Grilled Corn & Tomato Orzo with White Wine Sauce

  • 1 cup uncooked orzo pasta (I used whole grain)
  • 1 and 1/2 cups cherry tomatoes, halved
  • 1 an 1/2 cups grilled corn (defrosted frozen corn can also be used)
  • 6 green onions, diced (about 1/2 cup)
  • 1/2 cup basil, thinly sliced (aka chiffonade)
  • 1/2 cup dry white wine (I used sauvignon blanc)
  • 3 tablespoons butter (I used Earth Balance)
  • dash of salt

Makes 4 servings

 

Start by bringing a large pot of water to a boil and cooking orzo pasta as directed on the package.

In a large skillet or saucepan, melt the butter over medium heat. Then add the corn and green onion and sauté for about 2 minutes.

Pour white wine into the skillet and allow to simmer for another 2 minutes. Then reduce the heat setting to low.

I used sauvignon blanc but any dry white wine would work.

Tomato & Corn Orzo with White Wine Sauce (32)

Add tomatoes to skillet along with the cooked and drained orzo pasta, then stir until well combined.

Lastly, add a dash of salt and the sliced basil and mix together. Then serve warm with a cold glass of wine! (or cold, if that’s what you prefer!)

You guys, I am in love with this pasta.

It is unbelievably simple and has all of the wine flavors I adore.

Plus, if you use Earth Balance instead of butter then it’s vegan too!
