Gingered Apple and Almond Butter Toast- roasted apple slices tossed with honey and spices make for a sinfully delicious almond butter toast topping. Perfect for a healthy snack or breakfast!

The first one is for a new cookbook that was sent to me by Workman Publishing called Sheet Pan Suppers Meatless by Raquel Pelzel. Not only is it full of quick and easy one-pan meals but they’re entirely vegetarian with gluten-free and vegan options too.
There are so many quick and easy dinner ideas in this book but I couldn’t help being enticed by the sound of baked gingery apples on top of toast slathered with almond butter. What can I say? I’m a sucker for a big slab of toast.
Of course, having the right bread makes a world of difference in the quality of your toast. I used my favorite sourdough from our local bakery because it has a nice golden crust and a pillowy soft center. Ugh, I can’t tell you how happy that bread makes me. It’s truly the best.
To make the toast, you start by coating the apple slices with honey (or maple syrup) and a sprinkle of cinnamon, ginger and cloves. Then you spread them on a baking sheet and broil them in the oven for about 5 minutes until they’re nice and soft. After you broil the toast, you coat it with almond butter, slap the apples on top and insert into your face.
Such a simple combo but it makes for a ridiculously delicious breakfast or snack. Plus it’s a great way to eat all of the apples in season right now.

Gingered Apple and Almond Butter Toast
Yield: 4 pieces
Prep Time: 10
Cook Time: 10
Total Time: 20 minutes
Ingredients:
- 2 sweet apples, cored and cut into 1/4-inch slices (I used Gala)
- 2 tablespoons honey (or agave/pure maple syrup)
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- pinch of ground cloves
- pinch of fine sea salt
- 4 slices good-quality bread (at least 3/4-inch thick)
- 2 tablespoons dairy-free butter
Directions:
Preheat the oven broiler to high then line a baking sheet with parchment paper or silicone baking mat.
In a large bowl, combine the apples with honey, cinnamon, ginger, cloves and sea salt. Toss until evenly coated then arrange on the sheet pan and place in the oven. Roast the apples until tender, for about 5-7 minutes. Keep a close eye on them as broiler intensities vary. Remove the apples from the oven, place back into the bowl and set aside.
Lightly butter one side of each piece of bread then place them (butter side up) on the sheet pan and broil until toasted, for about 2 minutes. Flip each slice and lightly toast the opposite side for 1-2 minutes longer. Transfer the toast to separate plates.
Spread the buttered side with 2 tablespoons almond butter and arrange apple slices over top. Serve warm and enjoy!

Roasted veggies! You can’t go wrong with ANY kind of roasted vegetables.
i love love love roasting a whole bunch of vegetables with simple seasnings, herbs and spices…Its so versatile…to add to eggs for breakfast, make quick salads and my fave to make soups/dips depending on the weather..they add such a depth of unmatched flavour
I need this book in my life. Whatever’s in those eggplant meatballs, I want them. My favorite thing to make on a sheet pan is baby portabellos, red onion, cherry tomatoes, and chopped eggplant. Toss them in some olive oil and fresh herbs, then roast them and it’s so good!

I love to cook butternut squash, fingerling potatoes, and red onion on a sheet pan. The smell of all that roasting really fills the house with great smells, especially when chili powder or cardamom is added.

Roasted veggies with garlic and a sprinkle of smoked paprika, especially sweet potatoes. Yum.
Aaaaaagh that TOAST! It’s seriously giving me chills just thinking about warmly spiced apples and a thick coat of almond butter. Kinda tempted to reenact this on a slab of homemade pumpkin bread, ha! Also love the concept behind that book – I’ll have to check it out!

My favorite sheet pan dish is Cheater Eggplant Parm. Thinly slice eggplant. Drizzle olive oil, salt and pepper, and roast 10 min. Flip and top with a large slice of tomato. Roast 5 minutes. Sprinkle with parm and put it back in the oven for about 5 minutes.
I’m all about breakfast for dinner, so this toast is perfect for any time of day! My favorite thing to cook on a sheet pan is roasted veggies for a buddah bowl!
I just prepped an oven full of vegetables on sheet pans. Brussel sprouts, broccoli, cauliflower, peppers, onions, mushrooms, red potatoes, and sweet potatoes.
My favorite thing to cook on a cookie sheet is chocolate chip cookies! But I’m also growing fond of salmon with brussels sprouts, sweet potatoes, and apples! I’m anxious to see what other ideas her cookbook has!
I am so with you, awesome fresh bread makes me happy! I cook so many things on sheet pans, but baking bread or homemade pretzels are definitely two of my favorites. Almond butter + apples is such an awesome combo!

This recipe looks yummy! My favorite thing to bake on a sheet pan has to be cut up red onion, butternut squash cubes and then golden beets in their own little foil packets on the sheet pan. Everything gets roasted up and added to cooked farro, arugula and toasted walnuts all mixed together with a vinaigrette dressing. It’s good warm or cold. :)
Love the idea of cooking on a sheet pan. I honestly have never cooked more than roasting veggies or used it to make homemade french fries for my oldest. This opens up a new world to me!

I am a huge fan of sheet pan dinners! By the time I come home, take our puppy for a walk, and start dinner, I’m already exhausted! I love the easy of throwing everything on a sheet pan and having minimal cleanup (a huge bonus)! One of my favorite things to do is roast a huge variety of vegetables- sweet potatoes, red onion, kale, and cauliflower seasoned with olive oil, salt, pepper, and some turmeric for the cauliflower and smoked paprika for the sweet potatoes. Throw everything in a bowl and top with a tahini sauce for a delicious and simple meal.
Cutting tofu into triangles draped with a glaze on a sheet pan has made weeknight dinners so much easier. This blog post had me sprinkling cinnamon on apple slices and dunking them in almond butter. Sounds like I need to get more bread from the farmers market this week!

This recipe sounds amazing! I have not tried anything like it. I definitely have to try it. I like to roast my veggies on a sheet pan. The kids decided that kale chips are their favorite especially since we grow our own veggies now.

I love roasted veggies but all time favorite is homemade Pizza!! Now that I am getting fresh local organic veggies delivered to my door I can’t wait to try out new gluten free pizza dough spread with homemade sauce with tons of different veggies sliced thin on top!
