It’s T minus 9 days to Cinco de Mayo! Are you guys pumped or what?
I know I am. There are few things in life that make me happier than a plate of chips n’ guac paired with a tasty margarita.
Well I guess chips n’ guac with a margarita on a Mexican beach would be slightly better. Unfortunately for me the husband refuses to go to Mexico. Even when we lived in Texas and were just a short and very cheap flight from Cancun, he still wouldn’t go. He thinks it isn’t safe enough but um hello, people go there all of the time and come back just fine. Better than fine, actually. They come back refreshed, renewed, and feeling freakin’ fantastic.
So yeah, that’s a work in progress. But in the meantime I can enjoy Mexican food with these fresh strawberry mango margaritas so life is pretty darn good.
Oh, and if you’re wondering how exactly Jose Cuervo fits into the whole healthy theme I’ve got going on around here, allow me to explain:
1. Fresh strawberries are high in antioxidants and vitamin C.
2. Mangoes are high in vitamin C.
3. Lime juice is also high in vitamin C.
4. Tequila makes you feel good.
I rest my case.
The best part is that they look all fancy and pretty but they’re super easy to make. It’s literally like making a smoothie. But with liquor.
I made them with fresh fruit so that it’s more of a puree, almost like a thick juice, that you can serve over ice (aka “on the rocks”) but you could also make them frozen by substituting frozen fruit if you want. I personally prefer the fresh option because it prevents the whole brain freeze problem.
Not that I slam my margaritas or anything. I always try my best to keep it classy. But man, it’s hard to do when they taste this good!
