25 Healthy One Pot Vegetarian Meals
Happy Friday! What’s on the agenda for you guys this weekend?
It’s supposed to be cold and rainy here so we’ll probably lay low, watch a movie and bake muffins. I’m a leeettle obsessed with my most recent muffin creation and I can’t wait to share them with you. But you’re going to have come back Monday for those because today is all about healthy one pot vegetarian meals.
Until then I’ve rounded-up an awesome selection of easy dinner ideas for you to have on hand. Some of them are one pot, some one skillet, one pan, etc. But the theme is all the same: healthy, easy, one dish, and packed full of veggies!

Discovered this while breezing through recipes on StumbleUpon. It looks so good! My husband and I are vegetarians, so I’m adding this to the list I’ve been building of recipes we can try out together. Eating the same thing every week is getting old! Thanks for helping us shake things up a bit.

Interesting collection of recipes. I found several I’d be interested in making, but I’m not sure my husband would like them. Poor guy, I’m always experimenting on him, and he generally takes it pretty well. The Honey-Lime Quinoa Stuffed Sweet Potatoes has been in my regular rotation for quite a while, and I love it. I actually do it as a casserole instead of stuffing the sweet potatoes. Definitely, recommend that recipe to everyone.
I will make these recipes for my family
This list is gold! There are so many complicated recipes with exotic ingredients out there that it sometimes makes eating healthy discouraging. This list of one-pots is perfect for those of us who want to eat healthy, but have little time.

After hunting for hours for recipes I can have. I am very frustrated. I have celiac disease.
Most of these one pot meals use pasta. I know I can buy the gluten free ones. But really???
Pasta isn’t very healthy nite after nite. Is it? Also, I have allergies to corn , soy and peanuts. I do not care for Mexican or Asian foods. I dislike the spices they use. I do not eat mushrooms, or fish. I find breakfast the most difficult. Smoothies get old quickly.
I’m also vegan. There are not many veggies I will eat either. Never acquired a taste for them.
When I find a recipe I like. It’s not vegan. Or gluten free.I have found many ways to substitute. But then the flavor suffers. I know others must be in this same queue. Suggestions
